What began as a passionate side business has since evolved into a proud family tradition, supplying the tranquil town of Renchen-Ulm and the renowned Baden gourmet region with an exquisite range of artisanal pasta.

Today, that vision is carried forward by his wife, Christa, and their children, Jessica and Andreas. Since Michael’s passing in 2015, the family has preserved his profound culinary know-how, remaining physically involved in every step of the daily production. This proximity ensures that the original passion is never diluted by industrial scale—it is a craftsmanship you can truly taste on the plate.
Sourcing the Soul of the Noodle

For the Fischingers, high-quality raw materials are the foundation of integrity. Guided by a characteristic "Baden serenity," they refuse to bend to industrial shortcuts. This commitment begins with the radical freshness of their eggs. While many rely on liquid substitutes, this workshop holds a rare license to crack eggs on-site, sourced exclusively from farms within a 25 km radius. It is a labor-intensive choice made for one reason: freshly cracked eggs simply taste better.
The Foundation
The pursuit of the perfect bite leads the family to the world's premier growing regions for Durum Wheat. Because the local climate isn't suited for this specific grain, it is shipped to a specialized mill and processed into SSSE semolina—the highest quality achievable. Extracted from the heart of the grain, it gives the pasta its vibrant, golden glow and perfect al dente bite. For their Regional Spelt varieties, they look closer to home, embracing the extra effort required to knead this ancient grain for its nutty complexity and effortless digestibility.

The resulting collection is a curated balance of heritage and creativity. Whether through fresh infusions like Hokkaido pumpkin or the use of Brewer’s Malt, every variety is tasted and refined by the family multiple times before joining the range.
